Ingredients (4 servings)
- 400 g cooked chickpeas
- 200g cubed carrots
- 400 ml coconut milk – can be light (pure, canned, or carton)
- 2 garlic cloves
- 1/2 chopped onion
- 1/2 tsp cumin
- 1/2 red bell pepper
- 1 tsp curry powder
- 1/2 tsp ginger powder
- 1 pinch of salt
- Olive oil to taste
Preparation
- Heat a drizzle of olive oil in a medium pot.
- Sauté the onion, garlic, and bell pepper for about 5 minutes, until soft and aromatic.
- Add the curry, cumin, and ginger. Stir for 1 minute to release the aromas of the spices.
- Stir in the coconut milk and carrots. Let it simmer over low heat for about 15 minutes.
- Add the chickpeas and cook for another 5 minutes, until the sauce is creamy and rich.
- Adjust salt to taste.
- Finish with fresh cilantro and serve with brown rice.
