Now that the weather has cooled down, we bring you a miso soup that is very easy to make and will boost the whole family's immune system. It is a broth that can be consumed throughout the day and helps boost immunity. Because it contains miso, which is a probiotic ingredient, ideally it should not be heated to temperatures above 40ºC.
Ingredients:
- 1/2 onion

2 garlic cloves

1/2 carrot

3 dried mushrooms

1 piece of kombu seaweed*

2 teaspoons of miso*

Juice of 1/2 lemon

Chopped chives
Preparation:

Roughly chop the onion, carrot, and garlic.

In a saucepan, add water and place the onion, garlic, carrot, mushrooms, and kombu seaweed, and boil for 15 minutes.

Turn off the heat, strain the vegetables (which can be blended to be used in another soup), and let the broth cool down to a temperature where you can dip your finger in and hold it for 5 seconds.

Then add the miso, lemon, and chives, and serve.

You can also add a little miso to each soup bowl and pour the broth over it.
