A recipe for functional cookies, simple to make and that you can store to eat throughout the week or send in the kids' school snacks.
Ingredients:
- 1 banana
- 3 tablespoons of nut butter of your choice (e.g., peanut)
- 1 cup of oat flour
- 1 teaspoon of coconut oil
- 2 tablespoons of coconut sugar
- 1/3 cup of chopped dark chocolate
Preparation:
- Mash the banana with a fork and add the nut butter and coconut oil until a paste forms
- Add the coconut sugar and oats and mix to form a uniform dough
- Add the chopped dark chocolate and fold in
- Roll into small balls by hand and place on a baking tray lined with parchment paper
- Flatten the balls into cookie shapes and bake in a preheated oven at 180ºC for 15 minutes.
