Who said tacos are synonymous with fried foods, fats, or complications?
With these lentil and sweet potato tacos from Mafalda Rodrigues de Almeida (nutritionist), we get lightness, plant-based protein, and the flavor you've been waiting for.
They are ideal to serve as a light, practical, and nutritious meal: perfect for a Sunday evening with the family.
Ingredients:
- 1 drizzle of olive oil
- 1 red onion, chopped
- 2 garlic cloves, minced
- 1 tomato
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 pinch of Himalayan pink salt
- 1 cup lentils
- 3 cups water
- 2 orange sweet potatoes
- 6 corn tortillas (tacos)
- Chopped parsley, to serve
Ingredients for the Avocado and Lime sauce:
- 1 avocado, peeled
- 1/4 cup water
- 2 tablespoons juice
Preparation:
- Preheat the oven to 180ºC and line a baking sheet with parchment paper. Place the cubed sweet potatoes on the tray. Drizzle with olive oil and season with chili powder and salt. Mix and bake for approximately 20 minutes or until the potatoes are tender.
- While the sweet potato is roasting, heat a pan over medium heat. When hot, add the olive oil and chopped onion. Sauté for 2-3 minutes, then add the garlic and spices. Sauté for another minute, then add the chopped tomato and the lentils. Pour in the water and stir everything. Bring to a boil, then reduce the heat to medium-low, partially cover the pan with a lid, and cook for 20-30 minutes or until the lentils are tender.
- In a blender or food processor, add all the ingredients for the avocado sauce and blend until smooth. Add water one tablespoon at a time until you reach a creamy and smooth consistency (lump-free).
- Fill the corn tortillas (previously heated in the oven or microwave) with the lentils and sweet potato, and top with the avocado sauce, chopped red onion, and parsley leaves.
These tacos are a celebration of flavor and simplicity — without neglecting well-being.
