Healthy and simple recipes ● Roasted tomato soup (with Bend Detox)

And why not take the opportunity to roast the soup ingredients on the barbecue?

Because soups don't have to be tasteless or more of the same. This roasted tomato soup is fresh, slightly sweet, full of color, and loaded with natural antioxidants that help the body regain its balance — deliciously!

It is served cold and is even easy to take to the beach in a cooler to accompany your packed lunch on these hot days.

Ingredients:  

  • 4 medium, very ripe tomatoes
  • 1/2 red bell pepper
  • 1/2 red onion
  • 1 garlic clove
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon apple cider vinegar
  • 1 pinch of fleur de sel
  • Fresh basil leaves
  • Water as needed to adjust texture
  • 1 dessert spoonful of Blend Detox (you know we’re fans of our blends around here!)
  • Gluten-free savory paprika granola
  • Chili pepper

Preparation instructions:  

  1. Place the whole tomatoes, the bell pepper cut only in half (seeded), and the onion cut in half on the hot grill.
  2. Grill for 10 to 15 minutes, until the tomato skins crack, the bell pepper skin is charred, and the onion is caramelized at the edges. Turn occasionally to grill evenly.
  3. Remove the vegetables from the grill and place them while still hot in a plastic bag or covered container — let rest for 10 minutes. The steam will help loosen the skin.
  4. Remove the tomato and bell pepper skins with your hands or a paper towel. Also discard the grilled garlic, if used.
  5. Place the peeled vegetables in a blender, add the apple cider vinegar, olive oil, fleur de sel, and basil leaves. Blend until you get a creamy texture.
  6. Adjust with fresh water until you reach the desired consistency. Refrigerate and serve very cold, topped with fresh basil and a drizzle of olive oil.
  7. Serve with a final touch of gluten-free savory paprika granola and finely chopped chili pepper.  

Summer has these things: we say we're just going to eat a salad... and we end up having seconds of the barbecue bread. It’s all good!
