The rich miso soup is perfect for warming up winter nights, and is rich in nutrients and unique flavors.

Ingredients:
- 1 block of firm tofu (about 200 g), cut into 4 slices
- 1 tablespoon of toasted sesame oil
- 2 garlic cloves, minced
- 1 piece of fresh ginger (about 2 cm), finely grated
- 1 liter of water or vegetable broth
- 2 tablespoons of white miso paste
- 1 sheet of kombu seaweed (or nori, torn into smaller pieces)
- 1 medium turnip, peeled and cut into small cubes
- 1 cup of baby spinach
- 1 tablespoon of soy sauce (optional, to adjust flavor)
- 1 small leek, cut into thin strips (white part only)
- 1 tablespoon of olive oil
- Black sesame seeds for garnish
- 1 tsp Immunity Blend
- Preparation:
- Heat the sesame oil in a pot over medium heat. Sauté the garlic and ginger until fragrant (1-2 minutes). Add the water or vegetable broth and the kombu seaweed sheet. Let it simmer gently for 10 minutes.
- Remove the kombu seaweed and set aside. Add the turnip cubes and cook until tender (about 10 minutes). Dissolve the miso paste in a little of the warm broth separately and gently stir it into the soup. Adjust the flavor with soy sauce, if necessary.
- Heat the olive oil in a small frying pan. Fry the leek strips until golden and crispy. Remove and place on paper towels to drain excess oil.
- Add the spinach to the hot soup and let it wilt slightly. Add pieces of the reserved kombu seaweed for extra texture and flavor.
- Serve the soup in individual bowls, top with the crispy leek, and sprinkle with black sesame seeds and a pinch of Immunity Blend.
