Healthy and simple recipes ● Crispy Tofu with Cauliflower Mash

Starting the year on the right foot, for us, means taking care of our body and mind after a period in which we sometimes indulge in a few excesses!

It is important to maintain a balanced and nutritious diet to prolong the benefits. With that in mind, we have created a delicious and easy-to-make recipe, perfect for these colder days: Crispy Tofu with Cauliflower Mash and Herb Sauce.

  • Ingredients for the Tofu:
    • 1 block of firm tofu (about 200g), cut into 4 slices
    • 1 tablespoon of olive oil
    • 1 tablespoon of soy sauce
    • 1 teaspoon of garlic powder
    • ½ teaspoon of black pepper
    • 3 tablespoons of breadcrumbs
    • 1 tablespoon of sesame seeds (optional)
  • Ingredients for the mash:
    • 1 small head of cauliflower, cut into florets
    • 1 tablespoon of olive oil or vegan butter
    • 1 garlic clove, minced
    • Salt and pepper to taste
    • 2 tablespoons of unsweetened plant-based drink (or water)
  • Ingredients for the herb sauce:
    • 2 tablespoons of olive oil
    • Juice of ½ lemon
    • 1 tablespoon of chopped fresh parsley
    • 1 teaspoon of chopped chives
    • Salt and pepper to taste
  •  Preparation:
    1. Preheat the oven to 200°C.
    2. Dry the tofu slices with paper towels. Season them with olive oil, soy sauce, garlic powder, and pepper. Coat the slices in the breadcrumb and sesame seed mixture, pressing down well.
    3. Arrange the tofu on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through, until golden and crispy.
    4. Cook the cauliflower in boiling salted water until tender (about 10 minutes). Drain well.
    5. In a food processor or with a masher, blend the cauliflower with olive oil, garlic, and plant-based drink until you have a creamy mash. Adjust salt and pepper to taste.
    6. In a small bowl, mix the olive oil, lemon juice, parsley, chives, salt, and pepper. Set aside.
    7. Place a generous spoonful of cauliflower mash in the center of the plate. Arrange two slices of crispy tofu on top. Drizzle with the herb sauce and garnish with a sprig of fresh herbs.

Tip: Serve with a side of grilled vegetables to complete the meal.
