Ingredients for the marinated salmon:

200 g of raw salmon loin, very fresh and skinless
- Juice of 1 lemon
- 1 tablespoon of extra-virgin olive oil
- 1 teaspoon of freshly grated ginger
- Lemon zest
- Fresh chopped coriander or mint
- Sea salt and black pepper to taste

1 cup of frozen peas (boiled for 3 min in hot water and cooled)
- 1 tablespoon of olive oil
- Juice of ½ lemon
- Sea salt and black pepper to taste
- Fresh mint to taste

PREPARATION

Cut the salmon into medium cubes and coat with all the marinade ingredients. Cover and refrigerate for 20 to 30 minutes.

Blend the peas with the remaining ingredients until you get a creamy purée. Adjust the salt and acidity, adding a little water if necessary to make it lighter.
- Serve the cold purée as a base on a plate and arrange the marinated salmon on top. Finish with fresh leaves, lemon zest, or toasted seeds, if desired.
