Beach Sunday is pizza day. And this one is the kind that tastes good… and does good.
A crispy base, creamy pesto, smoked tofu, and that touch of the oven that comforts without weighing you down.
It is the perfect recipe for when you get back from the beach, tired but happy, and your body asks for something comforting — without veering off the wellness path.
Simple, nutritious, and kid-approved. And parent-approved, too!

Base ingredients:

80 g gluten-free oat flour

20 g rice flour

1 tbsp olive oil

1 tsp baking powder

1/3 cup water
- Pinch of salt, oregano, and garlic powder

Pesto ingredients:

1 handful of fresh basil
- 1 tbsp plain hummus

1 tbsp olive oil

Lemon juice, salt, and pepper to taste

Toppings:

1/2 cup smoked tofu, small cubes
- 1/4 cup sliced black olives
- Mozzarella cheese (optional)
- Sun-dried tomatoes to taste
- Fresh arugula to finish

Preparation method:
- Base: Mix all the dry ingredients. Add water and olive oil until a thick dough forms. Roll out thinly on parchment paper with your hands or a rolling pin. Bake in a preheated oven at 200°C for 10–12 minutes until golden.
- Pesto: Blend all ingredients until a creamy and aromatic sauce is formed.
- Toppings: Sauté the tofu in a pan with a drizzle of olive oil until slightly golden.
- Remove the base from the oven, spread with the pesto, and arrange the tofu, cheese, sun-dried tomatoes, and olives. Bake again for 8 minutes.
- Serve with fresh arugula leaves on top and, if desired, an extra drizzle of olive oil.
It is possible to eat pizza and still feel light. This crispy, healthy, and delicious version is ideal for ending Sunday with the kids, with no rush… and no heavy conscience (or stomach)!
