This brunch was designed for just that — to create quality time.
To savor fluffy pancakes, chat calmly, toast with a pink latte, and offer, in the form of food, what we often can't find the words to say: “Thank you for everything”.

More than a recipe, it is an invitation.
To pause, to share, and to celebrate the one who has always been there.

What this special brunch includes:

  • Fluffy and healthy functional pancakes
  • Light and citrusy cashew cream
  • Homemade vegan Nutella
  • Sliced fresh strawberries
  • Pink latte with the Pro-Aging Blend
  • Extras: granola, fresh mint, tea or coffee (optional)

INGREDIENTS

For the pancakes:

  • 1 cup of Functional Pancake Mix
  • 1 cup of plant-based drink (oat, almond, or soy)
  • 1 teaspoon of cider vinegar
  • 1 teaspoon of coconut oil (for greasing)

For the cashew cream:

  • ¾ cup of soaked cashews (min. 4h)
  • 2 tablespoons of lemon juice
  • 2 tablespoons of plant-based drink
  • 1 tablespoon of rice syrup
  • 1 pinch of Sea Salt

For the vegan Nutella (mini-prep):

  • ½ cup of toasted hazelnuts
  • 2 tablespoons of raw cocoa
  • 1 tablespoon of rice syrup or date syrup
  • 1 teaspoon of coconut oil
  • 2 tablespoons of plant-based drink (adjust to taste)
  • 1 pinch of Sea Salt

For the Pink Latte with Pro-Aging Blend:

  • 1 cup of plant-based drink (oat, almond, or rice)
  • 1 teaspoon of the Pro-Aging Blend
  • A few drops of vanilla extract (optional)
  • Cinnamon to sprinkle (optional)

Flavor extras:

PREPARATION

1. Cashew cream:
Blend all ingredients until smooth. Keep refrigerated.

2. Vegan Nutella:
Blend the hazelnuts until they become a paste. Add the remaining ingredients and blend until creamy. Store in a jar.

3. Pancakes:
Mix the plant-based drink with the vinegar and wait 2 min. Add to the functional mix and fold until a batter forms. Cook in a non-stick pan with a little coconut oil.

4. Pink Latte:
Heat the plant-based drink, add the Pro-Aging Blend and syrup, stirring until dissolved. Serve warm with a touch of vanilla or cinnamon.

5. Assembly:
Serve the pancakes with the cashew cream, fresh strawberries, dollops of vegan nutella, and granola on top. Garnish with mint and accompany with the pink latte.
