Ingredients (serves 4):
- 400g firm tofu, cut into thick slices
- 2 medium sweet potatoes, cut into thick rounds
- 2 medium white potatoes, cut into thick rounds
- 2 large carrots, cut into thick strips
- 1 head of broccoli, separated into florets
- 1 red onion, sliced into half-moons
- 4 garlic cloves, in their skins, lightly crushed
- Extra virgin olive oil (generously)
- 1 tablespoon soy sauce (optional, to season the tofu)
- Salt and pepper to taste
- 1 bunch of fresh parsley, chopped
- Black olives for garnish
- Preparation:

Dry the tofu with a cloth and cut into thick slices.

Season with soy sauce (optional) and a drizzle of olive oil, letting it marinate for 10 minutes.

Boil the sweet potatoes, white potatoes, and carrots in salted water until slightly tender, but not falling apart. Drain and set aside.

In a large frying pan or roasting dish, place the red onion, garlic cloves, and pre-cooked vegetables. Drizzle generously with olive oil and season with salt and pepper.

Arrange the tofu slices among the vegetables in the roasting dish. Drizzle with more olive oil so they become nicely golden.

Bake in a preheated oven at 200ºC for about 25 minutes, tossing the vegetables and turning the tofu halfway through, until everything is golden and slightly crispy.

Remove from the oven, sprinkle with fresh parsley, and garnish with black olives before serving.
