Today we are sharing one of our favorite recipes: tacos! This recipe is super simple and quick to make. It's ideal for warmer summer days when a light, fresh, and delicious meal is just what you need. To enhance the freshness of this recipe, you can pair the vegan tacos with a pineapple and mint juice with a pinch of Detox Blend.

Ingredients for the Tacos:
- 200 g firm tofu, drained and cubed;
- 1 tablespoon olive oil;
- 1 teaspoon ground cumin;
- 1 teaspoon sweet paprika;
- Salt and pepper to taste;
- 1 cup red cabbage, thinly sliced;
- Corn tacos or tortillas;
- Savory granola with Smoked Paprika.

Ingredients for the yogurt sauce:
- 1/2 cup coconut yogurt or other vegan yogurt;
- Juice of 1/2 lemon;
- 1 tablespoon olive oil;
- 1 clove of garlic, finely minced;
- Salt and pepper to taste.
- Preparation :
- Heat the olive oil in a frying pan over medium-high heat.
- Add the tofu, cumin, sweet paprika, salt, and pepper.
- Cook the tofu until golden and crispy on the outside, about 10 minutes, turning occasionally. Set aside.
- Wash and finely slice the red cabbage. Set aside to assemble the tacos.
- In a small bowl, mix the yogurt, lemon juice, olive oil, garlic, salt, and pepper.
- Mix well until you have a homogeneous mixture. Set aside.
- Heat the corn tortillas according to the package instructions.
- Place a portion of tofu in each tortilla.
- Add a generous amount of sliced red cabbage.
- Drizzle with the yogurt sauce.
- Sprinkle the savory smoked paprika granola on top for a crunchy touch.
These tacos are a perfect combination of flavors and textures, with the crispy tofu, fresh red cabbage, creamy yogurt sauce, and crunchy savory granola.
