It is natural to overindulge during the holidays and it is not always easy to get back on track.

With that in mind, this week we bring you a quinoa salad recipe. A light yet nutritious dish, perfect for continuing the detoxification process after our RESET Program.

Ingredients:
- 1 cup of quinoa (already cooked)
- 1 ripe avocado, sliced
- 1 bunch of broccoli (cut into small florets)
- 1 bunch of asparagus (cut in half)
- 1 tablespoon of extra virgin olive oil
- 1 clove of garlic, minced
- Juice of 1 lemon
- 1 tablespoon of pumpkin seeds (optional)
- Fresh cilantro or parsley leaves (to taste)
- Salt and pepper to taste
- Preparation:
- Cook the vegetables: Heat a large skillet with olive oil and sauté the garlic until golden. Add the broccoli and asparagus, season with salt and pepper, and sauté for 5-7 minutes until they are slightly tender but still crisp.
- Mix with the quinoa: In a large bowl, mix the cooked quinoa with the sautéed vegetables.
- Prepare the avocado: Add the avocado slices to the dish.
- Final dressing: Drizzle the warm salad with lemon juice, add more olive oil if necessary, and sprinkle with pumpkin seeds and fresh cilantro or parsley leaves.
- Serve: Serve the salad warm as a main dish, enjoying the detoxifying benefits of the green vegetables and quinoa.
