  • Ingredients:
    • 1 cup brown rice
    • 1/2 butternut squash, peeled and cubed
    • 200g fresh mushrooms (shiitake, portobello, or others of your choice), sliced
    • 1 small onion, chopped
    • 2 cloves of garlic, minced
    • 4 cups vegetable broth (preferably homemade and salt-free)
    • 2 tablespoons olive oil
    • 1 teaspoon fresh chopped sage (or dried)
    • Sea salt and pepper to taste
    • Chopped parsley for garnish (optional)
  •  Preparation:
    1. Prepare the pumpkin: Preheat the oven to 200°C. Place the pumpkin cubes on a baking sheet, drizzle with a tablespoon of olive oil, sprinkle with salt and pepper, and roast for 20-25 minutes, until golden and tender.

    2. Make the risotto: In a large pot, heat the other tablespoon of olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.

    3. Add the rice: Add the rice to the pot and stir for a few minutes, until the grains are lightly toasted. Gradually add the vegetable broth, one ladle at a time, stirring constantly until the rice absorbs the liquid before adding more. Continue this process for 20-25 minutes, until the rice is creamy and cooked.

    4. Sauté the mushrooms: In a separate frying pan, sauté the mushrooms with a little olive oil until they are golden and tender.

    5. Finish the risotto: When the rice is almost ready, add the roasted pumpkin cubes, sautéed mushrooms, and sage. Mix well. Adjust salt and pepper to taste.

    6. Serve: Garnish with chopped parsley and serve the risotto hot, perfect for a nutritious and light autumn dinner.
