Healthy and simple recipes ● Pink Burger & Banana Chips Bread
Aug 10, 2024
This week we bring you a perfect recipe for late August days that will delight the children (and the children's parents too)!
The Pink Burger with an especially fresh sauce, accompanied by some plantain chips.
The recipe looks complex, but it is very simple because while the chips are baking, we prepare the rest of the recipe.
The reference amount is for two people, but it can be scaled up for however many kids and grown-ups are sitting at your table this summer!
-
Ingredients for the Pink Burger:
- 2 The Therapist Pink Burgers;
- 2 burger buns (you can opt for a gluten-free version if you prefer);
- Lettuce leaves;
- 1 tomato, sliced;
- 1/2 red onion, sliced.
-
Ingredients for the sauce:
- 1/2 cup Greek yogurt or plant-based yogurt (for a vegan version);
- Juice of 1/2 a lemon;
- 1 tablespoon olive oil;
- 1 tablespoon fresh parsley, chopped;
- 1 teaspoon fresh mint, chopped;
- Salt and pepper to taste.
-
Ingredients for the plantain chips:
- 2 green plantains (the greener they are, the crispier the chips will be. Tip: you can find these plantains at Auchan, for example)
- 2 tablespoons olive oil or melted coconut oil;
- Smoked Salt to taste;
-
Preparation:
- Preheat the oven to 180°C and line a tray with parchment paper.
- Peel the plantains.
- Using a mandoline or a sharp knife, cut the plantains into thin slices (about 2-3 mm thick);
- Place the plantain slices in a large bowl. Add the olive oil or coconut oil and mix well, ensuring all slices are coated. You can add spices to taste.
- Spread the plantain slices on the prepared tray without overlapping, so that the chips become crispy.
- Bake for 15-20 minutes, flipping the slices halfway through to ensure both sides are golden and crispy.
- While the chips are baking, mix the yogurt, lemon juice, olive oil, parsley, mint, salt, and pepper in a small bowl.
- Stir well until the sauce is smooth. Reserve in the fridge until serving time.
- Heat a non-stick frying pan over medium heat.
- Cook the Pink Burgers according to the package instructions, usually about 3-4 minutes on each side, until golden and cooked through.
- Assemble the burger: lightly toast the buns if desired, place the Pink Burger on the bottom half of the bun, add the tomato slices, red onion, and lettuce leaves, drizzle with a generous amount of fresh sauce, and finally, cover with the other half of the bun.
- Remove the plantain chips from the oven and let them cool on the tray for a few minutes. The chips will become crispier as they cool. Add smoked salt to taste.
This burger is a perfect combination of fresh flavors and crispy textures, with the unique taste of The Therapist's Pink Burger. The plantain chips are the ideal side, making this meal irresistible!
Enjoy your summer evenings with simple, delicious, and healthy food.
