Easter is often associated with excess, but as has become our custom, we like to reinterpret this celebration with more lightness, more purpose — and, of course, plenty of flavor. This carrot muffin recipe was born from a desire to create something special and healthy.
With ingredients perfect for sharing with the family, offering as a personalized gift, or simply keeping for yourself. They are fluffy, naturally sweet, and have a fresh topping perfect for spring.
And since we always like to go the extra mile, we’ve included our Detox Blend — which brings a subtle hint of pineapple and an extra boost of vitality to your day.
And this recipe is super easy!

Ingredients for the muffins:

1 cup gluten-free oat flour
- ½ cup almond flour
- 1 dessert spoon of Detox Blend
- 1 teaspoon gluten-free baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon ground ginger
- 2 medium carrots, finely grated
- 2 tablespoons flax seeds + 6 tablespoons water (vegan egg)
- ⅓ cup plant-based drink (oat or almond)
- ¼ cup melted coconut oil
- ¼ cup date syrup or rice syrup
- 1 pinch of sea salt

Ingredients for the topping:

¾ cup cashews, soaked (minimum 4h)
- Juice and zest of 1 lemon
- 2 tablespoons plant-based drink
- 1 tablespoon rice syrup
- 1 teaspoon coconut oil

- Instructions:
- Preheat the oven to 180°C and prepare a muffin tin with paper liners.
- In a bowl, mix the flax seeds with the water and let sit for 10 minutes.
- In another bowl, mix the dry ingredients: flours, blend, baking powder, cinnamon, ginger, and salt.
- Add the grated carrots and fold in well.
- Add the coconut oil, syrup, and plant-based drink to the flax "eggs". Incorporate everything into the dry ingredients.
- Divide among the muffin cups and bake for about 25 minutes or until golden brown.
- For the topping, blend all ingredients in a food processor until you have a smooth cream.
- Let the muffins cool completely before topping with the cashew cream and garnishing with lemon zest.
