Vegetable Lasagna with Cashew Béchamel (with Anxiety Blend)

You know those days when the body asks for a light meal, but the soul craves comfort? This lasagna is for those moments. Gluten-free, full of color, flavor, and with that functional touch we love so much around here. The béchamel is made with cashews for delicious creaminess and enriched with our Anxiety Blend, which helps bring more calm (which we all need) at the end of a busy day.
It's one of those recipes that makes us feel good inside and out — perfect for a quiet dinner, or even to pack in your lunchbox for the next day.

Ingredients for the Lasagna:

1 package of lasagna sheets (vegan and gluten-free, if preferred)

1 eggplant, thinly sliced
- 2 carrots, grated
- 1 cup fresh spinach
- 1 cup crushed tomatoes
- 1 red onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
- Salt and pepper to taste

Ingredients for the Cashew Béchamel:

1 cup raw cashews, soaked (minimum 4 hours)
- 1 cup unsweetened plant-based milk (e.g., almond or oat)
- 2 tablespoons nutritional yeast
- 1 dessert spoon of Anxiety Blend
- 1 teaspoon lemon juice
- 1 teaspoon garlic powder (optional)

Salt and nutmeg to taste

1 cup raw cashews, soaked (minimum 4 hours)
- Preparation:

Preheat the oven to 180°C.
- Make the vegetable sauce: sauté the onion and garlic in olive oil until golden. Add the crushed tomatoes, grated carrots, oregano, salt, and pepper. Let it cook for 10-15 minutes.
- Prepare the béchamel: drain the soaked cashews and blend in a food processor with the plant-based milk, nutritional yeast, Anxiety Blend, lemon juice, garlic powder, salt, and nutmeg. Blend until you get a smooth, velvety cream.
- Assemble the lasagna: in a baking dish, alternate layers of pasta, eggplant, vegetable sauce, fresh spinach, and béchamel. Repeat until all ingredients are used, finishing with béchamel.
- Bake for about 25 to 30 minutes, until slightly browned on top.
- Serve warm, with a drizzle of olive oil and, if desired, a topping of nutritional yeast or toasted seeds.
