Ingredients (Serves 4)

  • 400g butternut squash (cut into small cubes)
  • 150g cooked or roasted chestnuts (roughly chopped)

  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • Approximately 1L vegetable broth (hot)

Preparation:

  1. Prepare the pumpkin: In a pan, sauté half of the pumpkin cubes with a drizzle of olive oil until soft. Remove about half of this sautéed pumpkin and blend it with a little vegetable broth until you obtain a creamy purée. Set the purée and the remaining pumpkin cubes aside.
  2. Start the risotto: In the same pan, add another drizzle of olive oil and sauté the chopped onion until translucent. Add the minced garlic and cook for another minute, without letting it burn.
  3. Add the rice: Add the rice (or quinoa/brown rice) and stir well for 1 minute to coat the grains in the oil and seasonings.
  4. Cook the risotto: Begin adding the hot vegetable broth, one ladle at a time. Stir constantly and wait for the broth to be almost completely absorbed before adding the next ladle. Continue this process until the rice is al dente (about 18-20 minutes for Arborio rice; adjust for quinoa/brown rice).
  5. Incorporate the Autumn Flavors: When the rice is almost ready, add the reserved pumpkin purée, the sautéed pumpkin cubes, and the chopped chestnuts. Stir well so that all the flavors blend together.
